Warm, Hearty Fall Lunch!

I just made a super yummy lunch that is perfect for fall! 


"Fall into Healthy Stew"

Ingredients:

Precooked wheat bulgar (about 1 cup)
Trader Joe's Butternut Squash Soup (about 1 cup)
Frozen brussels sprouts (5-6)
1 Tbsp Extra Virgin Olive Oil
1/3 C. Bob's Red Mill Nutritional Yeast flakes (doesn't need to be exact)
Dash of Salt, Pepper, and Cayenne Pepper

Cook the brussels sprouts in the microwave for about 2-3 minutes. Add the soup to the bulgar and mix everything together except the oil and nutritional yeast. Microwave for 2-3 minutes. Then add the nutritional yeast and EVOO (stir well). Top it off with a cup of Silk Original Almond Milk, warmed up for about 2 minutes and topped off with cinnamon. Yummy!
